Well, it’s beautifully hot here. Definitely high summer so beach is on our minds.

Here’s our fun food, Beach Salad.

Recipe

– Yellow capsicum (bell pepper)

– Carrot

– Celery

– Red cabbage

– Cucumber

Method

1. Cut a sun from yellow capsicum.

2. Add chopped carrot for the sand.

3. Use celery and red cabbage for a giant beach umbrella.

1. Boil, peel and cut eggs in half.

– Capsicum red & yellow (bell pepper)

– Carrot

– Cucumber

Method

1. Cut a piece of red capsicum for the dinosaur’s body.

2. Add a head and long neck from yellow capsicum.

3. Give her a tail from yellow capsicum.

Method

1. Cut a dolphin shape from watermelon (I used a plastic cookie cutter!)

Making a simple salad just that little bit more exciting is a breeze.

Here’s our fun food, Space Salad.

– Oat bran (or coconut)

Method

1. Cut a moon from a slice of radish (later made it a crescent moon).

2. Create a satellite from celery and cucumber.

 

3. Add some capsicum stars.

– Carrot

– Red cabbage

Method

1. Cut two discs of cucumber for wheels.

2. Join them with celery.

3. Add the front and back underneath parts of the car.

4. Then create the bonnet and windscreen.

5. Finish the outline of the car from celery.

6. Give it a door from celery.

7. Then a bright carrot sun and red cabbage road.

I made this, Joe and his friend scoffed it and then Max saw the photos and panned it. Soooo, I had to make another with his recommendations …

Method

1. Make an ear from half a strawberry.

3. Then some legs (which I then had to alter!)

4. Give him a tail.

5. And a trunk.

6. With a face from strawberry (we then swapped the mouth for a tusk)

1. Use a circle of zucchini for the body.

Summer here so there are soooo many bumble bees around. Love the buzzing and their big fuzzy bodies.

Our rendition looks a little sad – oops – but here’s our fun food, Grape Bee.

– Pineapple

– Black grapes

– Pepitas

– Desiccated coconut

Method

1. Cut a head from pineapple.

2. Add black grapes then more pineapple for the stripes.

3. Keep adding more stripes.

4. Use half grapes for the eyes and a slice for the stinger.

5. Ring with slices of grape.

6. Then do the same for some wings. Use more grape pieces for antennae.

1. Cut circles of cucumber.

Fun Fruit Skewers

Fruit Skewers are one of my favourite things to take to parties in high summer. All those luscious, brightly coloured fruits make for an irresistible plate. Make into rainbows (with associated colours) and serve with some yoghurt or coconut cream and they’re sure to be a winner.

Any seasonal fruits that will not spoil too quickly (or dip in lemon juice to preserve)

I have made two versions:

– Watermelon

– Green grapes

– Mandarin

– Strawberries

Method

1. Chop fruits and put onto skewer.

1. Arrange the peas as leaves.

1. Slice the apple cheeks to form the body and a smaller head. Then add half grapes for arms and legs.

Was experimenting with 3-D strawberry designs and suddenly there was a little girl in a cape!

– Yoghurt

– Blueberries

– Coconut

– Edible herbs

Method

1. Balance two strawberries on top of each other (smaller on the top).

3. Add eyes and mouth from yoghurt and bits of blueberry.

Method

1. Cut a strawberry for the pot.

Creating 3-D food art can be quite challenging. Not so this Christmas Tree!

– Dates

– Dried apricot

– Pepitas

– Sunflower seeds

– Long thread coconut

Method

1. Put strawberries of descending size on a skewer.

2. Squish some dates into an old bottle lid covered with foil to create the pot.

1. Slice the tomatoes in half to form the bodies.

1. Form the top of the tree from grapes.

Whilst I was experimenting with Halloween ghosts some cats appeared. These are pseudo meringues made from nothing but egg whites whipped until stiff. We love them served with the lightly cooked yolks poured over the top.

Ooh (or should it be wooo ooooo?) needed something quick and simple today so made some egg ghosts. Made by just whipping the egg whites with the stick blender until they form stiff peaks, cooking briefly in the oven and then pouring over the egg yolks and cooking for a few minutes. Delicious!

Fun Spooky Eggs

Spooky Eggs

This was a bit of a fail … alas. Not an “epic fail” as my boys would have been delighted to crow but not quite as I would have liked. I was trying to make Spooky Eggs so boiled some and cracked them all over. The aim was to dye them red and as I knew beetroot juice would make them pinkish I decided to try raspberries.

After soaking for 24 hours I washed off the crushed raspberries and peeled them and found they were covered in red and blue “veins”. They looked amazing but I found it hard to capture on film. They also tasted a bit like raspberry. Not disgusting but not great either.
I would recommend going the beet and settling for pink!

I was making some chilli for dinner and decided to whip up a quick owl.

– Avocado

– Black beans (or olives)

Method

1. Fill a bowl with chilli.

3. Then a beak from tomato.

4. And large irises from avocado.

1. Place cherry tomatoes on the plate for the centres of the flowers (slice a little bit off the bottom if you do not want them to be marbles!).

1. Slice the cheek from the pear to use as the head.

4. Then place the head on top (you may need to slice away some of the inner flesh for balance).

– Rice

– Corn

– Spinach

– Parsley

1. Squash some coleslaw into a mold.

2. Carefully remove the mold.

3. Add some rice for the seabed.

1. Use cup case holders to keep everything together and bite-sized.

I used some silicon cup cases from the discount store. If you are worried about transporting you can always pack some cardboard on top to hold in place once lid is on.

1. Cut cubes of watermelon and use them to create the “4”.

2. Add some detail around the sides if you wish (I scored with a sharp knife).

1. Use tomato for the head and the body.

4. Cut out a triangle for the beak.

Pears are just so “animal” shaped. They make excellent mice, bears, hedgehogs and now it appears hippos too.

– Brown pear

– Green pear

– Raisin (or blueberry)

Method

1. Slice the pear in half and use the fat bit for the body.

2. Cut a head from the other half and balance on the body.

3. Add a little tail and some legs.

4. I cut him a wide mouth (which you can just see down the bottom).

Method

1. Slice the pear in half (to either side of the core) and use for the bodies after removing the cheeks.

2. Cut long necks for each.

3. Add heads.

4. Then use the pear cheeks to create wings.

5. Raisins make the eyes and apricot the beaks.

6. Sprinkle desiccated coconut for water and we’re done!

Our champion little tomato plants are still giving us cherry toms in winter!! Had to pay homage and do a plate using them.
Here’s my fun food Tomato Scarecrow.

– Celery

– Dill

– Avocado

– Olives

1. Use a larger tomato for the body.

3. Add a carrot pole.

4. And arms.

5. Make him a jaunty celery hat.

6. Use avocado and dill for the field and crops.

7. Cut a radish to make a big sun.
