Scientists Prove Best Ways to Get Kids Eating More Veggies

I was doing research for my monthly blog at the Healthy Food Guide and starting reading about some of the studies figuring out how to get kids to eat more veggies. It was fascinating and I got totally engrossed. Even had to drill down and read some of the actual studies themselves not just the “news summaries”. Amazing how much time and energy is poured into this topic and it really gets me wondering whether we need to put way more energy into changing our customs and culture so that “eating veg” is not such a big deal. Why is eating veggies such a big hurdle for millions of kids? Why have we let it become so?

Egg-free Quiche

Yes I know “Egg-free Quiche” is a bit like “tyre-free car” and it was the first thing Max said .. “Mum, aren’t quiches made from eggs?” Well yes, generally they are however as part of my prep for the GF & Allergy Show this weekend I have been testing all sorts of things. Egg-free recipes have been a focus as it’s not something we generally do but of course eggs are a common allergen. The quiches turned out to be a total winner. All three boys gave them the tick – YES!!! So today Max has 4 kumara (sweet potato) mini, egg-free quiches, a slice of zucchini pizza and ironically 2 cooked egg yolks!!

Little Parcels Lunchbox

Max at school camp so Joe gets to be chief tester (guinea pig)! Yesterday I was making all sorts of wraps and rolls ready for my stint at the GF & Allergy Show so that’s Joe’s lunchbox today. Yesterday I was doing a big kitchen stint (when I have time I bulk cook) as today and tomorrow we have after school activities that limit what I can do for dinner. I had 250gms of mince beef that needed using and also had to step up and provide Max with some exciting vegetarian fare. Decided to make some rice paper rolls. As I had water boiling and frying pans going it wasn’t a big deal. Did mince, fried mushrooms and broccoli plus ginger for Roy & Joe. For Max (at his behest) I did raw, crushed peanuts, chopped lettuce, sesame & tamari, raw mushrooms, brown rice noodles and grated cheese (not very Asian with the cheese I know but it was the compromise and actually tasted OK!!). Max got 4 rice paper rolls and Joe 3 plus some chick pea crackers and I know they will love this lunch. A little different and something they will really enjoy. Go Mum!!

Lunch Wraps

Have been recipe testing – which the boys love and hate in equal measure. Today was a love day as I’ve done some rather successful brown rice wraps. Joe has his filled with mince, veg and cheese (to be melted). Max’s have cheese and home-made tomato sauce. They roll and stay together well. Good one Mum!! They were also very excited as my lovely neighbour gifted us some home-grown damsons. We all LOVE the tartness and the sweetness.

Kumara Quiche

The kumara (sweet potato) quiche I baked yesterday for Max was well received and of course makes the perfect lunch fare. Here he’s taking a big chunk of the quiche and some baked cauli tots in the thermos. He also has his standard chopped veggies, a piece of fresh corn, home-made yoghurt with fermented strawberries and blueberries and cherries and watermelon. No prizes for guessing what season we’re in!

Re-learning How to Cook

As Max is determined to remain a vegetarian for a while I need to rethink the way I cook. It is not enough to dump the meat and add some melted cheese or an egg. I am gradually getting better at providing meals that are tasty and nutritious without the traditional proteins I would add. But I am still a long way off being confident that I am providing a balanced diet and being able to serve enough decent protein substitutes and fat to keep Max satiated. Not only do I not want him to feel hungry but I want to make sure he is looking forward to meals with the same enthusiasm he used to. Ahhh, to be at a less busy point so I have the luxury of spending hours perusing new recipe ideas. But alas that is not so. I have however, made a promise to myself that I will do one recipe specifically for Max every other day so I am at least moving forwards and getting closer to serving the sort of food that will tick all of my boxes.

Easy healthy Lunchboxes

The lunchbox shown is Joe’s from this morning. Chopped veg, corn, nectarine, plum, home-made yoghurt with fermented strawberries and blueberries. To go in the thermos a marinated chicken wing, a zucchini fritter and some potato wedges. Max got the same but minus the chicken wing and I added a broccoli burger and some melted cheese (yes I resorted to the melted cheese … sigh). In my defense the broccoli burger was a new recipe and it rocked!

Kumara Quiche

I Iam feeling very smug about tonight though. Check out the Kumara (sweet potato) Quiche. It looks and smells fab and I tasted the mixture and can confirm that if Max doesn’t like it I will be quite happy to snarf the whole lot.

Max’s Moral Stand

So my lovely Max has just started at Intermediate School. It’s a big step up in terms of maturity and responsibility. Now he needs to leave a lot earlier for school, catch the train to and fro and generally be more independent. It’s been such a positive move for him and he’s loving it all. Mon night he came home from school and asked whether he could go vegetarian. We discussed his reasons for choosing to do this and he explained what he was thinking and what he had researched. I said that it wasn’t a problem but a little more warning may have been helpful. To which he replied “we eat so many veggies anyway it’s not exactly going to be a huge difference!” True ….

Quick healthy kids Lunchbox

I’m getting into my stride now so today for lunch he has corn, a nectarine, a plum, mixed chopped veg, veggie nori rolls (no rice just veggies) and to go in the thermos a jacket potato and cheese). There is also a totally sugar free (as in no sugar or sugar substitutes) quinoa muffin. I don’t bake for my boys … poor neglected little mites .. but I do test recipes for my programs and then they are the very willing recipients of the samples 🙂

Watermelon Manor

Watermelon is just so great for designing as you have a giant piece of fruit to work with. This fun food plate was a lot more time consuming than usual (if you want to go the whole hog and put in the window panes) but the end result was worth it and the mini-chefs were delighted by the detail.

Lunchboxes

So (and the irony is not wasted on me) the lady who spends countless happy hours creating food art from fruit and veg prepares very bog standard looking lunchboxes!

Fun, simple lunchboxes

I do not have the pretty boxes with all the little compartments to beautifully present every last morsel. But what I do have is:

1. Nutritious meals – every day.

2. Food that is soooo quick and simple to pack.

3. Lunches that sustain my boys from their big breakfast to their big dinner in the evening.

4. Vibrant colours that provide a variety of tastes, textures and nutrients and that can be eaten quickly and easily (busy boys).

5. Different foods every day of the week.

This is a standard “summer” lunchbox for us. It contains:

1. A pot of 5 types of chopped veggies (we always have raw veggies for lunch)

2. A pot of fruit – who doesn’t like apricots and cherries – yum!

3. Home-made yogurt with fermented blueberries (which the boys love). I have frozen it in deference to the weather so it’s a squeezy popsicle.

4. A piece of fresh corn. Gotta be done!

5. A thermos with fish and roast potatoes (leftovers from the evening meal)

Packing a meal like this literally takes no time at all and most is done the night before (fruit washed, yoghurt frozen etc.). Once you’re in a routine it doesn’t seem like a psychological hurdle or chore – although boy am I glad when holidays roll around!

Fresh Food Flowers ….

I was sooo excited last week. One of the lovely ladies that helps out at the school social events helping us to provide healthy choices for the students also has a child at the local Kinder. At their annual fundraising evening she organised sushi for the adults to go alongside the sausage sizzle. For the kids she put together 100 individual pots of fruit. And as the fruit was all free courtesy of the local supermarket it provided a great profit at $ 1.00 per pot.

Here I must digress. As much as supermarkets can work against people in terms of eating a fresh food diet I have to admit that our local Countdown is super supportive of any initiatives in the community that promote fresh food eating. Thanks Countdown we are so appreciative!

To have the sushi and the fruit pots was fabulous as it provided excellent choices for those wanting to avoid the standard fundraising fare. But far more exciting is that what we’ve done at the school is now being replicated in other community groups. Yeah!! We have planted the seeds and the fresh food will grow ….

What can you do to provide a fresh food alternative? At your house, in your school, within your community? Many small acts grow change …

Egg Ghosts

Ooh (or should it be wooo ooooo?) needed something quick and simple today so made some egg ghosts. Made by just whipping the egg whites with the stick blender until they form stiff peaks, cooking briefly in the oven and then pouring over the egg yolks and cooking for a few minutes. Delicious!

Spooky Eggs

This was a bit of a fail … alas. Not an “epic fail” as my boys would have been delighted to crow but not quite as I would have liked. I was trying to make Spooky Eggs so boiled some and cracked them all over. The aim was to dye them red and as I knew beetroot juice would make them pinkish I decided to try raspberries.

After soaking for 24 hours I washed off the crushed raspberries and peeled them and found they were covered in red and blue “veins”. They looked amazing but I found it hard to capture on film. They also tasted a bit like raspberry. Not disgusting but not great either.
I would recommend going the beet and settling for pink!

No soap, No shampoo, No smelly stuff .. at all ….

So if you’d told my younger self that I’d turn into a middle-aged hippy I would have scoffed. However, I seem to be heading unassisted into that definition!
I am obsessive about what we put into our bodies in the way of food and also in the other ways we must nourish our bodies, minds and soul. Sleep, exercise, mental stimulation, love, forays into nature etc. But I seemed to have skipped a step without realising it. Although I’ve always been fonder of baking soda and vinegar for cleaning than smelly chemicals this has not applied to the stuff we use to clean ourselves. Yes we use the eco versions of soaps and shampoos and moisturisers but do we actually even need these?
My light-bulb moment was after purchasing Norwex branded cloths for cleaning the house. The anti-microbial/anti-bacterial microfiber cloths eliminated the need for additional cleaning fluids. Even better they clean things with way less effort and who doesn’t want that!
I started to think about my personal care routine and question habits I’ve had forever. I began with my hair. Now I would never be invited to participate in a hair commercial. My hair is madly curly, thick, kind of wiry feeling and very long. It does two styles – very long or very short. I have spent years drowning it in conditioner to try and keep it from getting dry and the ends splitting. Whilst doing this the roots get greasy and by the 4th morning it just could not be left without a wash. And tangles, boy did I fight every time with knots, you would not believe what a task it would be.
Then I began to read about going “no poo”. Scary thought. I am a mad exerciser and so the thought of having hair not “properly” washed was very scary. And what about my dry hair? How would it cope without the half a bottle of conditioner twice a week?
But thinking about how much less of a chemical load I’d be placing on my body, the environment and also what I’d save in terms of dollars made me take the plunge. I was very thankful to the lovely ladies at the Real Food in NZ Facebook group who gave me advice and support and I just went for it.
To start with it was a disaster. I used baking soda and vinegar and my hair looked like it hadn’t been washed at all and was lank and lifeless. Fortunately vanity is not one of my many vices and my husband – bless him – probably wouldn’t even notice if I shaved it all off, so I decided to continue. Reading more I realised that baking soda was too harsh and that it may take weeks for my hair to adjust and let the natural oils balance. I ditched the soda and just washed my hair in apple cider vinegar. Much better result but still not the bouncy, vibrant look I was used to after a shampoo wash. Then as I persevered I realised that my hair no longer had knots. None! And it was soft. Not of course commercial ready soft (not going to happen with my hair) but way, way softer than previously. And the ends although split from previously were not dry. As I continued I also noticed that my hair didn’t actually need washing very often (although I do!). The natural oils have balanced and my hair does feel better. There is also not the super dry after a wash followed by the icky greasy a few days later. It is content, happy and balanced.
Never being one to do things by halves I decided to try the Norwex body wash cloths and go soap and cleanser free. Now despite the cleaning cloths and the no poo success I was still really, really, nervous about this. As I said before, I’m a mad exerciser and as I dumped deodorant 10 years ago after a workout I am in urgent need of a major shower. The first morning I was gobsmacked. Yep, totally amazed at how clean the cloths get the body without any cleaning products at all. In fact way better at removing sweat than soap. And the positive side-effect of this is that moisturiser is no longer necessary as the body balances those good old oils itself.
Now admittedly I still do soap my hands and moisturise those and my face but I am working on that. And of course I always need to share my crazy schemes with the boys. They have always been primarily no poo but they are now no soap too. Joe reckons its way easier to wash and loves his new body cloth. Max is not as enthusiastic but then again how many 10 year old boys are excited about washing?
And that leaves me searching for my next mad project. Any suggestions?

Ahhhhh, had a terrible mother moment and realised I’d forgotten to make a share plate for Joe to take to a social occasion and had literally 10 mins to rectify my “unmotherliness”.

Fresh Food Lunchbox Workshop

Fresh Food for lunchboxes

I love the opportunity to present lovely, fresh food beautifully and make it the hero for snacks, dinners or parties. I use this knowledge to provide healthy options at community functions. I also take the food art and fresh food cooking into school and local groups to excite children about real food choices.

Recently I have begun running “Fresh Food Lunchbox Workshops” for parents. These have as the focus facilitating a change from packaged lunches to a fresh food lunchbox. They are interactive and provide guidance for simple steps to change habits.

On Tue I was privileged to be asked to speak to parents at a local preschool and my lovely Max lobbied to help and put himself in charge of the graphics. It was great to have him along and he was also able to discuss his experiences as a primarily sugar-free child in a sugary world!

I will be sharing the information from the workshop on how to make a transition with food choices on my new website (to be launched very soon). The focus will be on fresh food for lunches and also family meals with tricks, tips and recipes to support this.

Delicious Dips at Cubs

I was really excited to be invited to run cooking sessions for the local junior cubs last week. They have two separate groups so I put together 4 sugar, nut and dairy free dips that everyone could make and then taste. We combined this with some knife skills chopping crudites – veg for the savoury dips and fruit for the dessert dips.

It was all a bit mad especially as the cub leaders needed to take charge of the recipes and I think a few measurements went slightly awry ….! Luckily everyone had a great time and we discovered some very enthusiastic choppers and people who never realised they’d enjoy a pesto or a hummus.

Cooking with six and seven year olds is great fun and there are so many skills they get to use. Everything from how to use a knife safely to which is a tablespoon and which is a teaspoon. And not of course forgetting my favourite mantra – “healthy food is delicious food”.

No Junk Junk

There are many junk products marketed as healthy foods but for the school winter disco we decided to turn the tables. For the seniors we had home-made burgers (created from top quality meat) and served in preservative/sugar free wholemeal rolls with sauce that contained no sweeteners. For the vegetarians there was a bean burger option and all were eaten with delight. It was fabulous to see good food served and enjoyed.

For the junior disco we again had fruit salad cups but next time we’re planning a home-made banana based “ice cream”.
