When I got some plump, long, green beans it was obvious what they were to become …

Here is my fun food Jack and the Beanstalk. It is very simple to make and the boys thought it was fantastic.

Healthy meals for kids

Recipe

– Steamed green beans

– Baby spinach leaves for the vine leaves

– I used hummus for the soil but other options like cous cous, sweet potato, pasta or lentils would be great too

– Mashed potato – for the clouds (or cauliflower puree/cottage cheese/ricotta cheese)

– Steamed carrot for the house

– Broccoli & cauliflower for the trees and bushes

– I used pumpkin for the castle

Method

1. Lay the beans down and intertwine them to make the beanstalk.

2. Then I put hummus along the bottom for the ground.

3. And fluffed mashed potato clouds.

4. I used broccoli as ready-made trees.

5. Then built Jack’s house from mash potato with carrot edges, windows and doors.

6. And planted cauliflower bushes.

7. Then I used baby spinach leaves to give the beanstalk a verdant look.

8. I wasn’t sure whether or not to add the giant’s castle.

In the end I cut one from a slice of roasted pumpkin and used steamed carrot for the detail.
